Baked Chicken & Sweet Potato Combo

Ingredients:
- 1 bag / 3 pound Sweet Potatoes
- 1 pack / 4 chicken Breast about 3 pound
- 1 bag Green beans – 12 ounces
- 6 ounces Sweet Pepper Mix
- 1/4 of Red onion
- 2 tablespoon Olive Oil
- Salt & pepper
- Oregano
- Red pepper chili flakes
- Cumin
- Garlic Powder
Directions:
- Preheat oven to 375 degree.
- Wash and dry pat sweet potatoes. Slice them thinly. Place them baking sheet with parchment paper.
- Prepare 1 table spoon olive oil, dash of salt and pepper. Brush mixture on the sliced Sweet potatoes.
- Bake for 40 minutes or fork tender.
To Prepare Sweet Peppers and Onions:
- Preheat oven to 375 degree.
- Thin slice sweet peppers and onions.
- Place them on baking sheet with parchment paper.
- Spray oil on top and add dash of garlic powder and oregano.
- Bake them for 20 minutes
To Prepare Chicken
- Pre Heat Oven to 375 degree.
- Cut Chicken lengthwise in half.
- Place Chicken on baking sheet with parchment paper.
- Brush Chicken with 1 table spoon olive oil, dash of oregano, garlic powder, cumin and red pepper flakes.
- Cook for 20 minutes and internal temperature is 165 degrees.
To Prepare Green Beans:
- Bring water to slow boil in a pot.
- Add green beans in the water and cook for 5 minutes.
- Carefully transfer green beans into ice water to stop continue cooking.
- Drain green beans and let them cool down.
To complete meal :
Place 4 ounces cooked green beans, 5 ounces baked sweet potatoes, 3.5 ounces baked and sliced chicken breast and 1 ounces Sweet pepper & red onion mixture on a meal prep container.
