INGREDIENTS:

8 eggs
2 Cups Liquid Egg Whites
1/2 cup onion diced
1/2 package firm tofu
2 cups fresh spinach
1 tb olive oil
8 ounces Feta Cheese
1 tsp salt & pepper
DIRECTIONS:
- Preheat oven to 375 degrees.
- Dice up all vegetables and tofu.
- In a large mixing bowl, whisk eggs then add in all the diced tofu & vegetables and crumbled feta.
- Spray oil & pour mixture in greased casserole pan.
- Bake for 50-60 minutes or until toothpick inserted in the middle comes out clean
