It is time to use my Executive Chef spirit and create some simple & different dishes. I can’t eat same food day in and day out. I am sure many of you scratching your head daily about what to cook. I love Trader Joe’s and Kroger and both grocery stores have pretty unique and macro friendly sauces.
Here is the recipe for Ground Turkey & Chick peas with Red Curry Sauce, side of White rice and Homemade Guacamole to cool the spice down. It was delicious and simple.

Calories for Entire dish with 0.8 cup white rice and 1/4 cup homemade guacamole : 518 with Pro: 24.9 / Carbs: 49.9 / Fat: 25.9
Ingredients:
- Thai Curry Red Sauce ( Trader Joe’s) , Whole bottle ( Attached picture below )
- Simple Truth Ground Turkey , 1 pound ( whole package)
- Simple Truth can Chickpeas ( drained well)
- 3 table spoon diced up red peppers
- 3 table spoon diced white onion
- 1 small gloves chopped garlic
- 1/4 tsp Coriander spice
- 1/2 tsp Sea Salt
- 1/4 tsp Black Pepper
- 3 table spoon rough chopped cilantro

Directions:
- In large Wok or Sautee pan , heat oil. Add garlic, onions and peppers, sauté about 3 to 5 minutes.
- Add ground turkey. Season with salt and pepper. Cook about 90%
- Add drained chickpeas and stir.
- Add Coriander and Red Thai Sauce.
- Cover, bring to a boil and simmer for about 20 minutes at very low heat until turkey is cooked.
- Garnish with cilantro and serve on white rice or brown rice with side of guacamole.
