Honey Lemon & Rosemary Chicken

Ingredients

6 thighs 6 drumsticks
2 cloves of garlic chopped
1 teaspoon salt
1/2 teaspoon ground black pepper
3 table spoon honey
Lemon Juice from 3 lemons( don’t trash after squeeze them)
2 table spoon olive oil
1 teaspoon chopped fresh rosemary
4 to 5 sprigs rosemary

 

Directions:

  1. Rinse the chicken and pat dry
  2. Preheat oven to 375°F
  3. Season chicken with salt and black pepper.
  4. In a medium bowl, mix together honey, lemon juice, olive oil , chopped garlic and chopped rosemary.
  5. Place chicken, skin side down, on a rack in a roasting pan. If you don’t have roasting pan , deep sheet pan will work.
  6. Slice lemons that are left over from squeezed lemon juice.
  7. Place sprigs of rosemary and sliced lemons around the chicken.
  8. Using a pastry brush, coat chicken with the lemon honey glaze.
  9. Roast in a 375°F oven for 30 minutes, basting again after 15 minutes.
  10. Turn chicken over, skin side up, and roast an additional 30 minutes, basting again after 15 minutes.
    Chicken should reach an internal temperature of 180°F or until the juices run clear.
