I was totally homesick this morning.My daughter was not feeling good and stayed home. I have memories popping up at my mind from my childhood and what would my mom do for me when I didn’t go to school because I was sick. She would prepare one of the best breakfasts to make me feel better. It always had more fat to keep me full all day because she knew I would go without eating for days. So I decided I wanted to piece of Turkish Breakfast this morning.

When you are feeling sick , My recommendation for you to eat more good fat packed foods to make you full. Because fats are higher in calories , 9 gram per calorie.

Good fats to add on to your daily routine.In healthy diet, Fats should make up to %30 of your daily calorie intake.

  • Avocado
  • olive oil
  • coconut oil
  • nuts and seeds
  • Wild Fish
  • Cage free eggs
  • Ground Beef , Lean

So I decided to cook  “Condensed Version of Menemen”  because cooking Real Menemen takes time and patience that i didn’t have this morning. Side of Feta & Kalamata Olives salad , tomatoes right out the garden this morning with sliced Avocado on side.

INGREDIENTS FOR “MENEMEN”

  • 2 cage free Eggs
  • 181 gram Firm Tofu- cut into cubes
  • Diced Red peppers
  • Diced Red onions
  • Dried Oregano
  • Cracked Black Pepper
  • Trader Joe Coconut Oil Spray

Instructions:

  • In a non-stick sauce pan , turn the heat to medium. Spray Coconut oil , add tofu. Saute for 2 minutes.
  • Add peppers & onions. Saute additional 2 minutes
  • Add 2 eggs and continue cooking.
  • Add oregano and black pepper on top.

Side Feta & Kalamata Olive Salad

  • 30 gram Whole Food Feta cheese
  • 3 pitted Kalamata olives , halved
  • 1/8 table spoon olive oil
  • 1/4 teaspoon fresh lemon juice
  • Garden fresh tomato or small vine tomato
  • Sliced Cucumbers
  • Dried Oregano
  • Little salt

Mix them all.

Entire plate : 431 calories , Carbs:16.2 gr , Fat: 25.1gr , Protein:37.5
